Rice and Nut Loaf
This rice and nut loaf recipe can be served as a delicious, nutrient dense main dish. It's easy to make and it tastes great!
Ingredients
- 2 Tbsp oil
- 2 Tbsp flour
- 1.5 cup milk (preferably soy milk)
- 2 cup brown rice, cooked
- 2 cup walnuts or pecans, chopped
- 0.25 cup green peppers, chopped
- 1 each small onion, chopped
- 0.5 cup celery, chopped
- 1 cup bread crumbs, seasoned
- 2 Tbsp soy sauce
- 2 Tbsp oregano
Instructions:
Mix all ingredients. Place in oil-sprayed baking dish or individual molds. Bake at 350 degrees F for 1 hour. Unmold immediately if you used individual molds. Garnish with carrot curls, parsley, tomato wedges, etc. Tasty with cranberry sauce.
